Potted shrimps with pickled fennel on wholemeal toast

I used to think potted shrimps the height of luxury. Smart restaurants in the 1970s would send them out in their little pots and ceremoniously upend them on to your hot toast. They are still a great treat. They are traditionally made with the tiny, flavourful Morecambe Bay brown shrimps, cooked and set in butter flavoured with a touch of nutmeg and cayenne. They are sold in one-serving pots. Because there is plenty of butter in the pot, I don’t butter the toast. The shrimps can be served cold, with the butter still set hard, or warm, with it melted. I like it, as here, halfway between the two. I also like a pickle with them, but this is hardly essential. A lemon segment will do fine.

2 thick slices of wholemeal bread

2 jars or tubs of potted shrimps, defrosted if frozen

a few rocket leaves
